So just in case you haven't been following my instagram lately, I recently got a kitchen aid and have completely fallen in love. I absolutely love baking, it's one of my favorite stress relievers.
2 1/2 cups old-fashioned rolled oats
1 1/2 cups almond, rice or coconut milk
1 large egg
2 tablespoons coconut oil
1 teaspoon vanilla extract
1 teaspoon baking powder
1/4 teaspoon salt
1 cup strawberries, fresh or frozen, thinly chopped
1/2 cup of dark chocolate chips
Combine oats and milk in a large bowl. Preheat oven to 375°F. Put 12 cupcake holders into a 12-cup nonstick muffin tin and lightly spray with cooking spray. Stir egg, oil, vanilla, baking powder and salt into the soaked oats until well combined. Divide the mixture among the muffin cups (about 1/4 cup each). Stir in strawberries and chocolate chips.
Bake the muffins for about 25 to 30 minutes. Test completeness with a toothpick.. Let cool in the pan for a 10 minutes. Loosen and remove.
